Popovers for Breakfast

 

Have you ever had the pleasure of eating at Neiman Marcus' "Zodiac Room"? It is one of my favorite places to go for a great lunch. The thing that makes it best of all is that while you are waiting for your order to arrive a server brings you a hot, fresh out of the oven Popover--no extra charge! And with it comes strawberry flavored butter! Oh, it is a treat that I can't describe. So imagine my delight when I found the recipe for their popovers.  Now it is a favorite for breakfast here--nothing else required. 



The ingredients are surprisingly few:
3 eggs
1 1/4 cups milk at room temperature
A pinch of salt
1 1/4 cups all-purpose flour

Preheat the oven to 450 degrees.
Then beat the eggs until lemon colored and foamy.
Then add the milk, blending well, but don't overbeat.


Then add the pinch of salt and flour all at once. 


Beat till foamy on top.



Then divide evenly into a popover tin sprayed all over with Pam, or oil by hand.
If you don't have popover tins you can use every other spot in a regular cupcake pan.



Bake at 450 degrees for 15 minutes, then reduce heat to 350 degrees,
 without opening the door, for another 30 minutes, or until nicely brown.

While it is baking you might as well whip up a flavored sweet butter!


Just mix together a softened stick of (real!) butter and 1/4 cup (or more) of your favorite jam, jelly, or preserves. I didn't have strawberry jam, so I just used an apple jelly. Mix till smooth.


Then smooth into a nice little ramekin to serve.


By then the popovers will be ready to pull out of the oven and serve.


And eat! Ohhh, so good!
