Clam Chowder for a Cold Winter's Day

Who doesn't love a bowl of hot Clam Chowder on a cold winter's day?
Here is my recipe; simple as always...
 
Ingredients
Part A:
2 6oz. cans chopped clams (I use 3)
1 c. finely chopped onion
1 c. diced celery
2 c. diced potatoes
 
Part B:
3/4 c. butter
3/4 c. flour
1 qt. Half& Half (or cream)
1 1/2 tsp. salt
1/2 tsp. cracked black pepper
 
Toppings:
grated cheddar cheese
grated pepper
fresh chopped parsely
 
Instructions
 
 Drain juice from canned clams and pour over veggies in a soup pot.
Set aside the clams to add at the end after making the rest of the soup.
 
 
Add enough water to barely cover the veggies.
 
 
Bring to a boil and simmer just until tender.

 
In a saucepan melt the butter.
Stir in the flour slowly and cook till bubbly.
Slowly add in the Half & Half, or cream, stirring.
Cook till thickened.
Add salt and pepper.
 
Add the sauce mixture into the soup pot with the veggies.
Add the reserved clams.
Stir until well mixed.
Serve hot with garnish of choice.
 
Freezes well--double it to have more later!
