Crustless Coconut Pie

This is the world's FASTEST to make pie!
And Sweetface's Favorite.
 
 
Crustless Coconut Pie Ingredients:
 
 
1 cup sugar
2 cups milk (I use Half & Half)
4 eggs
1/2 cup All Purpose Flour
6 Tbsp. butter
1 tsp. vanilla
1/2 tsp. salt
1 cup packaged shredded coconut
 
To Make:
Place all ingredients into blender or food processor.
Cover and blend for 10 seconds.
Scrape sides.
Blend for another 10 seconds.
 
Add the coconut.
Blend for 2 seconds.
 
Pour into well-greased pie plate.
 
Bake at 350 degrees for 50-55 minutes.
(Or until knife comes out clean.)
I place it on foil to protect from spills in the oven.
 
Serve when cooled to warm.
Also very good cold!
 
Optional: Fresh raspberries on top.

  1. I am waiting for a piece of heaven.....I love anything coconut....yum yum!!! Not to exclude a great tropical drink with coconut....thinking summer!
