Karen's Cucumber Dip Recipe
(Or What To Do With Your Cucumbers)
Here is the delicious dip recipe I promised you...
Ingredients:
2-3 Cucumbers
8 ounces Cream Cheese (@ room temp)
1/2 tsp Garlic Salt
1/4 tsp Worchestershire Sauce
Dash of Salt
3 Tbsp Mayonnaise (approx.)
(PS I think the next time I make this I will add a drop or two of green food coloring.)
1. Grate cucumbers and drain water off. Place them onto a double thickness of paper towels, and thoroughly drain the them by squeezing the water out through the paper towels.
2. Soften the cream cheese with enough mayonnaise to make it stirable.
3. Add the grated cucumbers and other remaining ingredients into the cream cheese mixture and stir together thoroughly.
4. Serve cold with your favorite chips or crackers. (We like Pita Chips)
Deeee-lish!
Hi Linda,
ReplyDeleteThis sounds like a very refreshing dip - This would also be good on those small party rye breads! Yummmm.
Thanks for the recipe.
Karen
Yes, indeed--especially for those of you who like rye bread. :-)
DeleteOh, that looks delicious! We didn't have an over abundance of cucumbers this year. (our garden died early) But I need to pin this for later. yum. :))
