Our Favorite Meatloaf for a Cold Winter's Day
We were all chilly with the cold, damp weather this week.
So I made our favorite meatloaf for dinner one night.
Leftovers make great sandwiches, too.
SPICY MEATLOAF
Ingredients:
2 lbs ground beef (or mixture of beef, pork and/or veal)
1 cup uncooked oatmeal
2 minced garlic cloves
1 tsp salt
1/2 tsp pepper
1 Tbsp spicy mustard (Dijon)
1/4 cup catsup
2 beaten eggs
3/4 cup (small can) of V-8 (or tomato juice)
Directions:
Preheat oven to 350 degrees.
Mix together all ingredients.
Form into a loaf pan.
Drizzle with more catsup on top.
Bake for 1 1/2 hours.
Serve warm with potatoes and veggies.
Enjoy!
